Is Kale Good for You?

Kale has been designated as a “superfood” by some, but is it really deserving of all the hype? In short—absolutely! This wonder veggie is considered to be one of the most nutrient-dense foods on the planet, and there are a whole host of health benefits that come with that title.

Kale is high in vitamin B6, vitamin C, fiber, and potassium; all four of these nutrients are important for maintaining heart health. In addition to this, the fiber found in kale can also help regulate digestion, and its potassium helps lower the risk of stroke and kidney stones.

Additionally, kale is ridiculously high in vitamin K—a one cup serving provides you with 1180% of your daily recommended amount! Vitamin K is essential for normal blood clotting, and since it can be difficult to find, it’s one nutrient that most people don’t get enough of. However, those who take blood thinning medication should exercise caution when eating kale, because its clotting effects can negatively affect the ability of the medication to do its job. Most nutritional experts recommend limiting your kale intake to only once or twice a week if that’s the case with you, but it's a good idea to discuss your kale intake with your doctor.
